Fresh Figs with Orange, ginger Sauce

Figs are such a delicious treat when they are in season. This healthy dessert recipe gives you an unusual and delicious way of enjoying them with very little effort, and no added sugar. The spicy orange sauce is a perfect complement to this healthy summer fruit.

Prep and Cook Time: 5 minutes, cooking time: 20 minutes

Serves 4

Ingredients:

• 1 cup fresh orange juice
• 1 TBS chopped fresh ginger
• 1 star anise
• 12 fresh figs

Directions:

1. Simmer orange juice, ginger, and star anise together on high heat for 20 minutes, reducing volume to about half. Strain sauce, discarding all but liquid.
2. While sauce is reducing, cut figs in half from stem to stem.
3. Drizzle sauce over figs. If desired, sauce can be chilled before serving with figs.

Healthy Cooking Tips:

You want the sauce to be the consistency of light syrup when done. Check the taste as it reduces. If it does not reduce long enough it will taste weak and flat, and it won't coat the figs. It will actually get thicker as it cools if you decide to serve it cold.
