Mexican Pork Taco Night
Black bean salad with bell pepper and onions: Combine 1
(15-ounce) can rinsed and drained black beans, 1 cup chopped red bell
pepper, 1/2 cup chopped red onion, 1/4 cup chopped fresh parsley, 1 1/2
tablespoons red wine vinegar, 1 tablespoon olive oil, 1/4 teaspoon black
pepper, 1/8 teaspoon salt, and 1 minced garlic clove. Serve at room
temperature.
