This garlic bread recipe is a little
different than most recipes in that it uses a garlic mayonnaise spread,
also known as an "aioli," instead of the traditional garlic butter. The
mayo gives the garlic bread a nice richness, and beautiful color.

Ingredients:
- 6 cloves garlic, mashed into a paste
- pinch of salt
- 1/2 cup mayonnaise
- 2 tbsp olive oil
- pinch of freshly ground black pepper
- 1 loaf French baguette
- 1/2 cup grated Parmesan
- 1/4 cup chopped fresh Italian parsley
Preparation:
Mince
and then mash the garlic with a pinch of salt on a cutting board with
the flat of a knife. Keep mashing until the garlic is a fine paste. Add
to a small bowl with the mayo, olive oil, and pinch of pepper. Stir well
and let sit in the fridge for 1 hour to develop the full flavor.
Preheat oven to 400 degrees F.
Cut the baguette in half lengthwise. Lay the bread, cut side up on a baking sheet. Spread the garlic mayo evenly on the 2 pieces of bread. Sprinkle the cheese evenly over the bread. Bake for 10-15 minutes, or until the garlic bread is golden brown and the cheese is bubbling. Remove, let cool for 10 minutes, cut in smaller pieces, and serve warm sprinkled with the chopped parsley.
