Ingredients:
For the creamy celery dressing
- 2 tbsp thick low fat curd (dahi)
- 1 tsp skimmed milk powder
- 1 tsp lemon juice
- 1 tbsp finely chopped celery
- 1 tsp sugar
- Salt and black pepper to taste
Other ingredients
- 1 cup carrot cubes
- ½ cup baby corn, cut into roundels
- ½ cup bean sprouts
- 1 cup torn lettuce
- 1 cup shredded spinach
- 1 tbsp chopped spring onion greens
- Salt to taste
Method:
1. Mix all the ingredients in a bowl, add little water and whisk it to prepare the creamy celery dressing. Pour the mixture in a bowl and refrigerate to chill.
2. Place the other ingredients in a bowl of cold water to make them crisp.
3. Drain and wrap them in a muslin cloth and place it in the refrigerator.
4. Place the lettuce in a serving platter and arrange the vegetables over it.
5. Sprinkle salt and serve with creamy celery dressing.
